A few weeks ago I made baklava for the first time. It is one of my favorite desserts but I never attempted to make it myself assuming it was simply too difficult. It's so beautiful, layers and layers of chopped nuts and dough, covered in a delicious syrup, how could I possibly make something so amazing?! I am very glad to say that I couldn't have been more wrong. It wasn't difficult at all!
One of my favorite things about cooking and baking is getting lost in the process. When I'm really into what I'm doing in the kitchen, the world falls away. It's just me and the ingredients, doing a dance until the dish comes together. This recipe really kept me in the moment because phyllo is so delicate you do have to be quite mindful of your handling of it. So, I buttered and layered until I had a lovely sheet of Persian baklava, brimming with pistachios and topped with a sticky sweet syrup and beautiful dried rose petals.

Check out these photos of my Baklava, it was almost too beautiful to eat! (But, I did eat it, I did say "almost!")
You'll notice that mine are cut into squares while Chef Adam's are on a diagonal, making a really beautiful shape. My brain did not compute when trying to angle the knife to get a similar cut to that in the recipe so instead of making a mess, I went with a square. It did not alter the taste one bit 😉

OMG this looks so good and I love baklava! I'm going to have to try this this week.
You wrote about Creme Brûlée the other day, my favorite dessert! Today, you get my #2!! I am definitely going to try out this recipe. I remember making it MANY years ago (like over 25 years). I bought the phyllo dough and did not make it from scratch.
