This is a cake that feels fancy but it very easy to pull together and is so, so good. I am lucky enough to have a stand-up mixer but you can easily mix the batter with a wooden spoon. I've shared this cake with vegans and non-vegans and everyone, I mean everyone, LOVED it.
I don't have elderflower liqueur so I used the soy milk substitution. To make sure the icing wasn't boring without the liqueur I did mix in a splash of vanilla extract.

The frosting would probably taste wonderful if you used elderflower syrup instead of liquor - not that it's easier to get your hands on the syrup ;-) Around here you can't buy it at supermarkets, it's usually a home-made product.
