Simple Chickpea Salad



This was my lunch today, simple and delicious


I'm not a fan of the life stories that always precede a recipe so you won't get that here. The background is, I was hungry, I love chickpeas, and was craving lettuce.



Simple Chickpea Salad


Ingredients

  • 2 cans of chickpeas

  • Vegan Mayo (you can use hummus if you don't want to use mayo)

  • Carrot - diced small

  • Red onion - diced small

  • Lettuce leaves

  • Extra-virgin olive oil & red wine vinegar

  • Salt and fresh cracked pepper to taste

  • Roughly chopped parsley for garnish


Directions


  1. Drain and rinse the chickpeas then pour into a bowl

  2. Mash some of the chickpeas with a potato masher, leave some chickpeas whole to keep it interesting and add texture (lots of recipes tell you to mash beans with a fork, don't do that, it takes so much longer!)

  3. Add mayo - I use a soup spoon and gradually add mayo after stirring in each spoonful (use a different spoon to stir), you want the chickpeas coated and creamy - you do not want them swimming in mayo

  4. Dice your carrot and onion and mix 'em in - this really is to taste, start with a little bit and taste as you go. No matter how much you love onions, you can overdo it here

  5. Grab a big bowl and your favorite lettuce (which you already prepped using the method in yesterday's blog)

  6. Tear lettuce leaves into bite-sized pieces and drop them into your bowl

  7. Drizzle a bit of olive oil and red wine vinegar, sprinkle leaves with salt and pepper and toss

  8. Take a big scoop of the chickpea salad and plunk it into the middle

  9. Garnish with chopped parsley and top with some more pepper if you like

I love chickpeas in almost any way, shape, or form! I guess my favorite way might be roasted !

Your simple recipe is something similar to what I’ve made before. On the lettuce, even better! Enjoy!

There really isn’t a wrong way to eat a chickpea, I love them roasted too!

Kimberly, I do something like this fairly often. Chickpeas do not survive long in my canned-beans collection-- I love them in recipes and plain by the spoonful! Recently, I found this product in the mayo section of a regular grocery store: Best Foods VEGAN Dressing & Spread. Very nice. I would take out some of its salt if I could, but it's more convenient than making my own mayo. Have you used this one? Please keep these recipes coming!

Yes! Though here on the East Coast it’s under the name Hellman’s Vegan Dressing & Spread. In fact, it’s what I used in this recipe
