Today's Veganuary is about, you guessed it, snacks! I had a super busy day but didn't want to miss posting a blog so I tapped my website's AI to help me with a blog about vegan snacks. What do you think?
1. Veggie Sticks with Hummus
Cut up your favorite veggies like carrots, cucumbers, and bell peppers and serve them with a side of creamy hummus. It's crunchy, refreshing, and packed with nutrients!
2. Avocado Toast
Smash some ripe avocado on whole-grain toast and top it with cherry tomatoes, salt, pepper, and a drizzle of balsamic glaze for a delicious snack.

Kimberly, how yummy! Your #1 snack is a top favorite of mine-- veggie sticks dipped in hummus, especially olive tapenade hummus. I have been looking for a less-fussy version of my banana-walnut cookies, and I love your banana oat balls-- got to try them. As to avocado toast-- so popular-- I just like to open an avocado and eat it now, with a thin-edged spoon. No waiting! I'm still looking for a baked (?) energy bar that is not sweet. Any ideas? I do eat fresh, raw almonds-- very satisfying. Thanks for a fun post and good inspo!
Oh, I am very plant-based and absolutely love all your recipes that you have shared today. I had forgotten about the possibility of nutritional yeast on popcorn. Sounds delicious. Thanks for sharing such delicious-sounding vegan recipes!
